Pasta all’Amatriciana

Ingredients
  

  • 12 oz Bucatini or Spaghetti
  • 2 tbsp Olive Oil
  • 4 oz Guanciale or Pancetta Diced
  • 1 can Tomatoes Crushed
  • 1/2 tsp Red Pepper Flakes Adjust to Taste)
  • Pecorino Romano Cheese Grated
  • Salt and Black Pepper

Method
 

  1. Equipment needed: Large pot for boiling pasta
  2. Cook the pasta in boiling salted water until al dente. Drain and keep some pasta water.
  3.  In a large skillet, heat the olive oil over medium heat.
  4. Sauté the diced guanciale or pancetta until crispy.
  5. Add red pepper flakes and the crushed tomatoes. Simmer for about 10 minutes.
  6. Toss the cooked pasta in the Amatriciana sauce, adding pasta water as needed.
  7. Season with salt and black pepper.
  8. Garnish with grated Pecorino Romano cheese.
