- Equipment needed: Large pot for boiling pasta
- Cook the pasta in boiling salted water until al dente. Drain and keep some pasta water.
- In a large skillet, heat the olive oil over medium heat.
- Sauté the diced guanciale or pancetta until crispy.
- Add red pepper flakes and the crushed tomatoes. Simmer for about 10 minutes.
- Toss the cooked pasta in the Amatriciana sauce, adding pasta water as needed.
- Season with salt and black pepper.
- Garnish with grated Pecorino Romano cheese.
