Description
Pizzelle are classic Italian wafer cookies and are baked in an electric Pizzelle press machine similar to a waffle maker. These popular Italian cookies are anise flavoured, with specks of anise seeds throughout the cookie. And for chocoholics, there is a variation for you as well.

Equipment needed : Airtight container for storing
Follow your pizzelle iron's instructions; typically, about 30 seconds per pizzella.
In a bowl, beat the eggs and sugar until well combined.
Stir in the melted butter and anise extract.
In a separate bowl, whisk together the flour and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing until you have a smooth batter.
Preheat your pizzelle iron according to the manufacturer's instructions.
Drop spoonfuls of batter onto the iron and close it. Cook until golden and slightly crisp.
Carefully remove the pizzelle and let them cool on a wire rack.
Store in an airtight container.
