- Equipment needed : Large pot for boiling pasta
- Cook the pasta in boiling salted water until al dente. Drain and keep some pasta water.
- In a large skillet, heat the olive oil over medium heat.
- Sauté the minced garlic until fragrant.
- Add the assorted fresh spring vegetables and cook until they're tender yet crisp, typically about 5-7 minutes.
- Toss the cooked pasta with the sautéed vegetables, adding pasta water as needed.
- Season with salt and black pepper.
- Garnish with chopped fresh basil, mint, and grated Parmesan cheese
